Crafted with patience, this Cap Classique undergoes six years of lees ageing for a refined mousse and classic brioche character. The nose reveals a nougat nuttiness and complex notes of white peach, lime cordial, and honey. On the palate, the crisp granny smith apple character meets the full richness that balances the vibrant acidity. With the earlier harvest schedule required for Cap Classique, the wine showcases exceptional minerality and character, a testament to the vineyard’s quality. The wine was disgorged and corked early December of 2023. While under cork, the wine ages elegantly, and the fruity floral notes will become support characteristics as the richer, brioche and nutty character take centre stage. An exceptional wine to enjoy throughout its ageing journey.

Created by utilising Méthode Champenoise - the classic method of making champagne - our vintage Cap Classique is made from Chardonnay planted on the Estate and defined by secondary characteristics from extended ageing on its lees and in the bottle. The Chardonnay grapes undergo hand harvesting and are whole-bunch pressed in the cellar. Only the delicate free- run juice from the early stages of pressing is transferred into a stainless steel vessel for fermentation. Following fermentation, the wine is aged on the lees for 8 months before bottling.

This vineyard is planted on the Estate, with shallow gravel and white clay soils that provide optimal drainage, encourage root development, and impart distinct minerality to the Chardonnay grapes, enhancing the complexity and finesse of the resulting Cap Classique. The 2017 vintage is considered one of the finest vintages experienced by the Cape Winelands. Despite being in the midst of a drought, wineries had to carefully ration their water usage. The year brought considerably cooler temperatures than the previous one. These cooler conditions, coupled with the dry climate, yielded fruit of exceptional concentration. The extended hang time allowed the grapes to ripen perfectly, resulting in the production of truly exceptional wines.

Waterford Estate is situated in the Blaauwklippen Valley on the rolling slopes of the Helderberg Mountain in the well-known Stellenbosch region. Waterford Estate prides themselves in making Fine Wine from carefully selected grapes. Winemaker, Mark Le Roux and viticulturist, David van Schalkwyk both believe a Fine Wine displays the character of its cultivar and a true sense of place. A Fine Wine should reflect the length on the palate, has a complexity of flavours, internal harmony between aromatics and the palate, and balance between its essential components.
