Indecent Obsession OVP Chenin Blanc

A reflection of the winemaker’s obsessive desire to create big, bold and opulent wines from Chenin Blanc. The grapes are crushed and the skins pressed reductively in an “Inertys” press. The juice is carefully transferred to small new French oak barrels where it finishes malolactic fermentation. Slower fermentation preserves better natural acidity in the juice and retains a lower pH allowing for a larger portion of Botrytis fruit to equate and coat the acidity. A wonderful expression of a winemaker’s dream to blow Chenin beyond its normal capabilities showing off its richness and finesse in the same wine.
