Barrel Fermented 59 Chenin Blanc

This Chenin Blanc pairs beautifully with dishes like duck confit, fish with cream sauces, pâtés, and foie gras. Its richness and balanced acidity complement the flavors of these dishes, enhancing the overall dining experience.

The grapes are sourced from a 59-year-old single vineyard of Chenin Blanc located on the slopes of the Bottelary Hills in Stellenbosch. The vineyard's decomposed granite soils and southward incline contribute to the wine's unique character and minerality.

Grapes are harvested at optimal ripeness and undergo overnight skin contact. The juice is then drained into older 225-liter French oak barrels, varying in age from 4 to 6 years. Fermentation is carried out using wild yeast, a process that can take up to 4 months. The wine is matured in these barrels for a total of 7 months, allowing for the development of complexity and texture.

Stellenrust is a Stellenbosch producer working with nearly 400 hectares of vineyards across the Helderberg and Bottelary Hills.
