This blend of 94% Sauvignon Blanc and 6% Sémillon presents tropical notes of gooseberry, lime, and white peach. Subtle hints of fynbos, blackcurrant leaf, and a touch of white asparagus add depth. The youthful palate leads to a long, structured mineral finish.

Grapes were hand-harvested early in the morning in 10 kg lug boxes and pre-cooled before hand-sorting, destemming, and crushing. Skin contact was limited to six hours, and the free-run juice was settled overnight before inoculation with carefully selected yeast strains. Fermentation occurred in stainless steel tanks at controlled temperatures between 12° and 14°C. A small portion of the Sémillon was fermented in French oak barrels to enhance complexity.

The grapes are sourced from four different dryland-farmed vineyards located in the Western Cape Coastal Region, including Cape Town, Stellenbosch, and Darling. These vineyards are situated approximately 16 km from the Atlantic Ocean, at altitudes between 204 and 295 meters above sea level. The cooling ocean breeze allows for extended hang time, resulting in concentrated grapes with intense flavors.
