Sophie Schaal
Born in Burgundy, my journey into the world of wine began with my studies in Dijon. After five years of dedication, I earned the national diploma of oenologist. The pivotal moment in my oenological adventure unfolded in 2013 during my first journey to South Africa. This experience broadened my horizons, introducing me to new terroirs, landscapes, and meaningful connections. Fate played a significant role, as I also found love in South Africa alongside Julien Schaal, an Alsatian winemaker involved in crafting South African wines. Today, as a married couple, we divide our time between France and South Africa. As a mother, I place great emphasis on aligning all my actions with sustainable practices. Hence, the transition to organic farming unfolded naturally.
Description
A fabulous white wine, showing mango, papaya and dried-lemon character with stony and floral notes. Deep and complex palate with wonderful tension between the tropical fruit, the spicy oak and a peppery quality. The long finish is both bright and creamy.

As an aperitif with prawns, fish terrine, seafood salad, marinated raw fish, sushi, steamed fish, snails in garlic, spaghetti with clams, veal stew with tarragon, fresh or hot goats cheese.
