PC Chardonnay

It will complement most fish dishes or can be enjoyed with lighter meat dishes and creamy pasta.

Due to difficult conditions during the start of the 2019 vintage, it delivered a much smaller crop of Chardonnay. However, this smaller crop was healthy and intensely concentrated.

The wines were left on their gross lees for 10 months before racking, blending, and bottling. Of the final blend, 21% was fermented in new 500L French oak barrels, 11% in 2nd fill, 21% in 3rd fill and the rest in older 225L and 300L barrels.

Predominantly whole bunch pressed, with minimal sulphur use before fermentation. The juice is racked to barrel after one day of settling and a portion is left to ferment naturally, while the rest is inoculated. After fermentation is complete, the barrels are tasted, some are sulphured up and others are left to complete MLF.
