Cabernet Sauvignon

Pair with rich beef, lamb and venison stew. A great companion for lamb shank or oxtail.

The vineyard is located 150m above sea level on a north-west facing slope in the Bottelary Hills of Stellenbosch. Gravel soil offers less vigorous growth which, together with sufficient heat due to the slope and altitude, leads to ideal ripening conditions for fully ripened grapes.

Specially selected barrels. Wine was aged 20 months in 300L and 225L French oak barrels, 20% new, the balance 3rd and 4th fill.

Fermentation took place over 10 days on the skins in closed tanks at 20 – 25 °C, pumped over every four hours. Extended skin contact took place for 10 days.

Mooiplaas Wine Estate and Private Nature Reserve is situated in the Westward reaches of the Stellenbosch Winelands, approximately 40km east of Cape Town. Our vineyards lie on the steep slopes of the ancient mineral-rich soils of the Bottelary Hills, where we produce a range of environmentally friendly wines rooted in tradition and artisan techniques.
