Rubicon

This wine pairs well with rich meats such as beef, lamb, and venison. Its robust structure and layered flavors also make it a suitable companion for dishes with earthy, spicy, or smoky components​.

The 2021 Rubicon is crafted from grapes grown exclusively on the Meerlust Estate in Stellenbosch, South Africa. This vintage benefited from higher-than-usual winter rainfall and cooler growing conditions, leading to a later harvest and extended ripening period. This resulted in wines with intense flavors, freshness, and a fine tannin structure​.

Each grape variety was harvested and fermented separately, with malolactic fermentation taking place in both 300-liter barrels and larger Foudres. The wine was then aged for 18 months, with the first 8 months allowing each component to develop individually, followed by another 10 months post-blending to harmonize the final product. This meticulous process helps ensure the wine’s complexity and balance​.

Meerlust is a historic Stellenbosch wine estate with eight generations of family winemaking dating back to 1756. Best known for its flagship Rubicon Bordeaux-style blend, the estate also produces Cabernet Sauvignon, Merlot, Pinot Noir and Chardonnay, with vineyards shaped by the cooling influence of nearby False Bay.
