Sauvignon Blanc

Each parcel of grapes is hand harvested at a Balling determined by our winemakers and brought into the cellar in 18kg crates. The grapes are hand sorted, crushed and destemmed and then given skin contact to extract extra flavours in the skins. After pressing fermentation takes place in our Heritage Cellar concrete tanks, these tanks allow for the perfect temperature management of 13˚C and 15˚C. These five parcels are fermented separately and when blended create a complex and multi-dimensional wine that is greater than the sum of its parts and showcases the depth and richness of the estate.

Meerendal Estate has a Mediterranean climate in general with warm, dry, summers, but the prevailing South Easter provides cooling winds and the proximity to the Atlantic coast provides cooling mists in the early evenings and mornings. Winters are cold and wet with an annual rainfall on the estate of 580mm.
