Reserve Chardonnay

The best bunches are selected from our organic Chardonnay blocks on the estate. These bunches are whole pressed in the cellar and racked to barrel where spontaneous fermentation takes place. The wine is left on the lees to mature and malolactic fermentation starts & stops naturally.

Rooted in the oldest viticultural soil in the world, it is made up of decomposed granite on the lower slopes of the Helderberg Mountain. This vineyard enjoyed the refreshing cool breezes from False Bay (Atlantic Ocean) during the day. Cool night air flows down the mountain, resulting in even ripening of the berries and good natural acidity. The macro climate is maritime, with cold, wet winters and sunny warm summers.

The wine was aged in barrels for 16 months and 66% of it was in new oak. This wine was made using organic & biodynamic principals. The French Oak barrels were selected after years of experimenting & trails, to create a full bodied, creamy style Chardonnay.
