Low-Alcohol Sparkling White

This wine pairs well with seafood or a fresh chicken salad. A wine to be enjoyed on its own celebrating in the good company of friends.

Grapes were harvested early morning. Skin contact was given for a few hours to extract flavour from the skins. Only free run juice was used. The juice was cleared by flotation, racked and inoculated with yeast. After alcoholic fermentation was completed, the wine was racked and SO2 was added to preserve the wine until it was ready to be bottled.
