V2 Merlot

This Merlot pairs well with dishes such as roast lamb, beef stew, and mushroom risotto. Its balanced structure and fruit-forward profile complement hearty and savory meals.

Grapes for this wine were sourced from vineyard blocks 5 and 7 at Journey’s End estate in Stellenbosch. Block 7 is situated adjacent to a Eucalyptus forest, imparting a subtle herbal character to the wine. The vineyards are located at an elevation of 190 meters above sea level on Tukulu soils derived from decomposed granite. The proximity to the ocean and cool sea breezes allow for extended hang times, promoting phenolic ripeness.

The wine matured for 16 months in oak barrels: 25% new French oak, 5% new American oak, and the remaining 70% in older barrels. This regimen contributes to the wine's complexity and depth.

After overnight cold storage, the grapes were hand-sorted and destemmed. Whole berries underwent a 4-day cold soak before inoculation. Fermentation lasted 15 days at temperatures between 18–25°C, with a carefully planned pump-over schedule to ensure soft tannins. Malolactic fermentation was completed in stainless steel tanks.

Journey’s End is a Stellenbosch wine estate owned by the Gabb family, who have developed the property and its vineyards since 1995. With a focus on Chardonnay, Cabernet Sauvignon and other classic varieties, the estate produces site-driven South African wines shaped by its elevated vineyards and Stellenbosch terroir.
