Unoaked Chardonnay

After harvesting between January 6th and February 13th, 2024, at an average of 21.9°B, the juice underwent cold settling for two days. Fermentation took place in stainless steel tanks using selected French yeast strains (EC1118 and D47). Post-fermentation, the wine remained on its lees for four months with occasional stirring to enhance complexity and mouthfeel.

The grapes are sourced from south and east-facing slopes at elevations ranging from 250 to 310 meters above sea level. These vineyards benefit from the cooling influences of False Bay, which help in capturing intense flavor compounds in the grape skins. The soils are composed of decomposed granite, specifically Hutton and Glenrosa soil forms, contributing to the wine's minerality and freshness. ​

This Chardonnay is crafted in an unoaked style, with maturation occurring in stainless steel tanks on the lees for four months.
