The winemaking process for this wine begins with the meticulous harvesting of the grapes before 9 am, followed by a 24- hour cold soak to extract the desired flavours and characteristics. Subsequently, a cold fermentation at a precisely controlled temperature of 10 degrees Celsius takes place, further accentuating the wine's cool profile.

Situated in the southernmost vineyards of the picturesque Robertson Valley, flanked by the majestic Riviersonderend Mountains, this region enjoys a notably cooler climate. The presence of the Breede River, often accompanied by morning mists, and the invigorating sea breeze originating from Cape Infanta, collectively contribute to a refreshing ambiance that moderates the temperature of the grapes during hot summer afternoons. The mesoclimate here is characterized by significant diurnal temperature variations and the presence of cooling soils composed of calcareous clay on limestone. These unique conditions imbue the wine with distinct cooler climate attributes, such as heightened acidity and a leaner profile, while simultaneously maintaining a captivating fruit-forward, full-bodied mouthfeel. Situated on alluvial soil in close proximity to the meandering Breede River.

Maturation occurs in a harmonious blend of neutral small oak barrels and concrete eggs, resulting in a remarkable mouthfeel that defies expectations despite the wine's modest alcohol content.
