Winter 2017 was a continuation of the drought. Spring brought showers which assisted early growing. These continued through until December. Not a particularly windy vintage allowed the bunches to develop well. February and March were noteworthy for a lack of heatwave; long cool nights and pleasant late summer days which contributed to exceptional ripeness. This was our latest harvest time for Cabernet Sauvignon. Our 2018 wines have higher acidity as a result of the cooler growing conditions and are concentrated with dense flavours and good structure.

The wine was matured in an equal combination of 225 and 500 litre French oak barrels for 18 months. Bottled 7 November 2019.

These grapes were picked on 1st, 5th and 13th April 2018 from specific parcels with varying soil types. This complexity in growing has resulted in a wonderful intricacy in the wine. Grapes were picked at optimal ripeness to enable the correct balance between sugar and phenolic components. Individual batches were bunch and berry sorted, crushed and destalked to tank. Natural fermentation started after 10 days cold soaking.

Holden Manz is a family owned wine producer located in the heart of the beautiful Franschhoek Valley. Established by owners Gerard Holden & Migo Manz in 2010 the estate grows cabernet sauvignon, cabernet franc, merlot and syrah and sources a selection of white varietals from specialist growers.
