Handpicked and sorted, destemmed and crushed. Fermentation in open tanks with punch downs, pump overs and delestage as required. Malolactic fermentation and maturation in barrel till bottling for almost a year.

The two neighboring vineyards share the same soils and sunshine. Trellised to optimize growth and fruit development, we like the vines to sprawl for the sunshine to penetrate the fruit zone, but also have shading effect. They benefit from cover crops during winter months and additional hay on their roots every couple of years.
