Nuits-Saint-Georges 1er Cru Les Procès

This 1er Cru pairs with French dishes like a rabbit or game, such as pheasant or venison.

Les Procès is a very small 1er cru that sits south of the village of Nuits-Saint-Georges, next to Pruliers. The Lachaux's 0.7 hectare accounts for a large chunk of this tiny vineyard, with Maison Joseph Drouhin owning almost all of the remaining acreage. This example comes from vines more than 50 years old.

100% malolactiv fermentation. 70% cask - 30% new oak.

On arrival in the winery, the grapes are destemmed. Grapes are put in the vat without crushing to preserve the berries. Cold pre-fermentation takes place, ranging from 3 days to a week. Little interventionist and pumping over are done on a case by case basis depending on the temperatures, densities and taste character of each cuvée.

The name Arnoux has been a feature in Vosne Romanée since the mid-19th century. Since the early 1990s Robert Arnoux's son-in-law Pascal Lachaux has been running the estate and in 2009 Pascal and Florence have at long last made the subtle change in the naming of the Domaine. Pascal has indeed proved himself to be a hugely talented winemaker and his drive and ambition have ensured that the Domaine is now regarded amongst the top tier in Vosne-Romanée.
