The grapes for this Shiraz come from cool vineyard sites in Stellenbosch, benefitting from coastal breezes that help moderate the climate. This allows the fruit to ripen slowly, developing intense flavors while retaining good acidity​.

This wine is aged for about 12 months in French oak barrels, 40% of which are new. This barrel maturation imparts subtle oak nuances and adds complexity to the wine​.

The winemaking process for the Delaire Graff Shiraz involves careful handpicking of grapes, followed by fermentation in stainless steel tanks. Post-fermentation, the wine undergoes gentle extraction to preserve the fruit’s purity​.
