Grand Vin de Chambert

Ideal with roasted duck breast, grilled lamb chops, cassoulet, beef bourguignon, or hard cheeses like aged Comté or Manchego. Its balance and freshness complement both rich meats and more refined fare.

The vineyards lie on the highest part of the South Quercy limestone plateau (‘causse’) at around 300 metres altitude. Soils consist of brown clay-limestone, Kimmeridgian limestone, and iron-rich clay, which bring minerality and freshness to the wines. The estate is fully certified organic and biodynamic, with an average vine age of 50 years. Only the oldest vines were selected for this Grand Vin.

Aged 18 months in large French oak foudres, this wine is built to age gracefully and develop further complexity over the next decade.

Hand-harvested grapes were fully destemmed and manually sorted. Fermentation took place in individual concrete tanks with indigenous yeasts at 25–28°C. Post-fermentation maceration lasted 15–30 days to refine tannins. The wine aged for 18 months in large French oak foudres to preserve terroir character before blending and bottling.

Château de Chambert is the largest organic and biodynamic estate in Cahors, having received certification in 2012 and 2015 respectively. The estate is home to 45 hectares of vineyards, of which 80% are Malbec, 17% are Merlot and 3% are Chardonnay, with an average vine of 50 years. They are located high up on the limestone ‘causse’, or plateau, regarded as the best part of the Cahors appellation, producing balanced Malbec’s of intensity and freshness. In the cellar, they work with large oak foudre so as not to overpower the terroir characteristics in their wines.
