Perfect as an aperitif or matched with oysters, crab, fresh shellfish, mild soft cheeses, smoked salmon, or fruit‑based desserts.

Grapes are sourced from the single lieu‑dit “La Loge” in Celles-sur-Ource (Côte des Bar), south-facing Kimmeridgian clay‑limestone soils. The Pinot Blanc vines average 80 years old and are cultivated sustainably under Ampelos certification.

Extended lees ageing of 36 months enhances texture and complexity, highlighting refinement and purity.

Vinified in stainless steel without added sulfur until bottling. The blend comprises base wines and a perpetual reserve dating from 2011–2019. It undergoes full malolactic fermentation and is aged on lees for 36 months prior to disgorgement. Dosage is Extra Brut at 3 g/L.

The Gerbais family has been growing vines in Celles-sur-Ource for 8 generations and making wine since 1930. After the Second World War Pierre Gerbais began investing heavily in vineyard land: while he started with just 0.4 hectares of vines the domaine has grown to nearly 18 hectares today. His son Pascal is now at the helm of the estate and since 2009 Pascal’s son Aurélien has been working together with the family as well. Responsible agriculture is at the heart of the Gerbais philosophy and since 1996 the estate has been a member of Ampelos an organisation that controls and certifies sustainable viticulture.
