Sourced from the eponymous Les Grandes Côtes lieu‑dit in Celles‑sur‑Ource (Côte des Bar), where Pinot Noir thrives on south‑facing slopes with a mix of Portlandian and Kimmeridgian soils—marl, fossil‑rich limestone, Portlandian clay—imparting both minerality and fruit expression. The estate practices sustainable viticulture and manual harvesting.

Extended lees ageing of 36 months post-secondary fermentation enhances complexity and texture, all without oak influence.

Base wine is blended with a solera reserve dating back to around 2011. Fermented and aged in tank without added sulfur until bottling. Underwent malolactic fermentation and matured for approximately 36 months on lees (sur lattes) before disgorgement. Bottled and dosed at 3 g/L (Extra Brut).

The Gerbais family has been growing vines in Celles-sur-Ource for 8 generations and making wine since 1930. After the Second World War Pierre Gerbais began investing heavily in vineyard land: while he started with just 0.4 hectares of vines the domaine has grown to nearly 18 hectares today. His son Pascal is now at the helm of the estate and since 2009 Pascal’s son Aurélien has been working together with the family as well. Responsible agriculture is at the heart of the Gerbais philosophy and since 1996 the estate has been a member of Ampelos an organisation that controls and certifies sustainable viticulture.
