A blend of Chenin Blanc (40%), Chardonnay (30%), Verdelho (25%) and Viognier (5%).

The white wine matured for in French oak 14 months

All three components were whole bunch pressed and fermented in French oak barrels except for a small portion of Verdelho which was fermented in a porous egg-shaped vessel. The wine is left on its fermentation lees for 14 months before bottling takes place. The Chardonnay was fermented in a combination of new and 2nd fill barrels, the Chenin in new, 2nd fill and 3rd fill and the Verdelho in old neutral wood and the egg.

With 27ha of vineyards planted in rich koffieklip soils and cooled by late afternoon breezes from False Bay our vineyards benefit tremendously by the unique terroir in which the vines are planted. The utmost care is taken to ensure that the vineyards are meticulously farmed for the production of only the most premium quality fruit. Cavalli Wine Estate is home to some of the best Chenin blanc and Cabernet sauvignon in the region, both of which have been at the helm of producing award winning wines. We also focus on Chardonnay, Viognier, Verdelho, Malbec, Petit Verdot and Shiraz.
