Ghost in the Machine Shiraz

The fruit was sourced from the Drift Estate Shiraz and Malbec, and Siberia (Hemel-en-Aarde) Grenache Noir vineyard. Low yields, sustainably farmed, IPW Certified vineyards, hand picked at optimal phenological ripeness. Soils at the Drift: decomposed shale and granite, clay and silica.

The individual components were racked 2-3 times during 20 months aging in 50% new oak, French and American 228L and 300L barrels. No fining, course filtration only.

Vineyards were picked and fermented separately. Shiraz and Malbec were destemmed, Grenache was fermented whole bunch under CO2, carbonic fermentation. Cold soak 5-7days, natural ferment with wild yeast,3x daily punch downs, post-fermentation maceration 30 days, before pressing in a traditional basket press.
