Vermentino Premium

This Vermentino pairs well with seafood, particularly shellfish and lean fish, as well as light Mediterranean dishes, aligning with its minerality and citrus notes​.

This Vermentino is sourced from Voor-Paardeberg, South Africa, where Ayama planted the country’s first Vermentino vines. The vineyard is positioned on decomposed granite and clay soils, with a northeast to southwest row orientation that enhances sunlight exposure. The vines, planted in 2014, are maintained with a Guyot trellis system and drip irrigation​.

The wine spent several months in neutral barrels, adding a slight roundness without overwhelming oak influence​.

Grapes were hand-harvested, whole-bunch pressed, and allowed to settle before fermentation in a mix of stainless steel and older neutral barrels to preserve the wine's fresh character while adding subtle texture. Fermentation used local yeast, and the wine was matured in neutral barrels for a balanced integration​.

The exceptional terroir of the Voor Paardeberg ward and the grapes cultivated in the area has been the source of various international wine awards. It is the location of this ward that makes it so unique. The mountain slopes of the Paardeberg, together with the soil composition and prevailing winds, create a specific quality in the grapes. The wines produced here have the potential to become part of the elite wines of the country. Our territory is also dedicated to the production of extra-virgin olive oil of quality.
