A maiden-vintage Blanc de Blancs from 100% Chardonnay grown in Stellenbosch's Polkadraai Hills, where decomposed granite soils and a cooler mesoclimate support bright acidity and mineral character.

The wine remained on the gross lees for 6 months before being bottled for secondary fermentation and aged on the lees in bottle for 35 months before disgorgement.

The grapes were whole bunched pressed and cold settled overnight, after which the juice was racked to 50% in older 500L barrels and 50% in stainless steel tanks for fermentation.
