The Tin Mine White

This versatile white blend pairs excellently with grilled fish, crayfish, or poultry dishes. Its balanced acidity and creamy texture also make it a delightful companion to creamy pasta dishes and fresh salads.

The vineyards for the Tin Mine White predominantly originate from Zevenwacht's estate on the Polkadraai Hills ward of Stellenbosch. The soils are composed of decomposed granite with varying structures and clay in the subsoils. The slopes face south to southwest, situated at altitudes between 200–350 meters. A small portion of Chenin Blanc is sourced from their Banghoek Valley property.

The wine is matured for 8 months on the lees in a combination of 500L French oak barrels and concrete eggs, contributing to its complexity and richness.

Grapes are harvested at 22–23.5 ºBrix, depending on the varietal and site. After whole bunch pressing, the juice is settled and racked to a combination of 500L French oak barrels, with 15% fermented in concrete eggs. The wine undergoes partial malolactic fermentation and spends 8 months aging on the lees to enhance mouthfeel.

Zevenwacht is a Stellenbosch wine estate with a 300-year history and vineyards across its maritime home farm and Zevenrivieren on the Helshoogte Pass. Known for Chenin Blanc, Pinotage, Sauvignon Blanc, Cabernet Sauvignon and the Tin Mine blends, the estate combines regional character with a strong focus on vineyard-led winemaking.
