Estate Syrah

Pepper-crusted kudu, slow-roasted springbok, venison or roast lamb.

South-westerly facing Stellenbosch slopes at roughly 230-250 metres above sea level on decomposed granite soils. The vines are trellised on a seven-wire hedge system and yield approximately eight tons per hectare.

Matured for 12 months in 500L French oak barrels, with 20% new oak.

Harvested at just over 23° Balling. Fermentation peaked at 28°C with regular pump-overs for even extraction, and a 30% portion was fermented with 25% whole bunches.

Zevenwacht is a Stellenbosch wine estate with a 300-year history and vineyards across its maritime home farm and Zevenrivieren on the Helshoogte Pass.
