Vondeling
Vondeling meaning ‘foundling’ lies on the slopes of the unspoilt and undiscovered Paardeberg mountain approximately 45 minutes’ drive from Cape Town. It was granted to Swedish immigrant Oloff Bergh in 1704 and a three-centuries-old winemaking tradition began. Today an environmentally sensitive approach to farming and minimal intervention during the winemaking process ensure wine with a distinct fingerprint of origin. Vondeling’s flagship wines Vondeling Babiana and Vondeling Monsonia are named after rare species of fynbos that are endemic to the Paardeberg mountain the home of Vondeling Wines.
Description
The wine has a vibrant ruby red colour with a dash of purple. The nose is refined opulence personified. Bright violets are infused with dark fruit with just a hint of earth and wood smoke. Sweet spices abound, rich in cloves, subtle nutmeg and aromatic coriander. The palate is alive with redberry fruit and has a chocolaty richness with undertones of wild herbs. The wine has a full, viscous texture and a lingering finish.
Food Pairing
Well paired with de-boned leg of lamb, barbequed over a hot bed of coals or hearty, slow cooked rolled pork belly with root vegetables and herb roast tomatoes.
