Bush Vine Sauvignon Blanc

lightly cooked shellfish like oysters and shell-on prawns, fresh crab and simply grilled fish such as sea bass.

The grapes are handpicked from certified OLD VINES and sorted. Picking occurs in the morning to take advantage of cooler conditions and the fruit is protected from oxidation. Picking from bush vines requires a back breaking effort but it is worth it.

After 6 months the wine was removed from barrel and was stabilized before bottling.

From 2016, we decided to change the style of our Bush Vine Sauvignon Blanc. We wished to give it a greater point of difference from our regular Sauvignon Blanc and we believe the intensity of fruit allows it to benefit from barrel treatment. In 2021 the grapes were mostly crushed and destalked to allow for some skin contact. 80% of the juice was racked to barrels (25% new French oak /75% used barrels) and 20% to Amphora to complete the natural fermentation. Malolactic was avoided to retain freshness and batonage occurred weekly.

On a clear day one has a beautiful panoramic view of the mountains overlooking the Cape Peninsula.
