Sauvignon Blanc

Best paired with fresh seafood, oysters, or salads.

Sourced from Vergelegen’s Schaapenberg and lower Schaapenberg vineyards, which are the highest on the estate, the vineyards benefit from cool southerly winds and stress conditions, contributing to the wine’s complexity and subtle salinity.

No oak is used in this wine. While drinking beautifully now, it also has potential to improve with age.

The grapes are hand-picked and then undergo both inert and oxidative pressing. Fermentation occurs in stainless steel tanks, using different yeast strains to draw out the wine's diverse characteristics. The wine is left on the lees for regular stirring to balance its high acidity before being blended, filtered, and bottled.
