Sauvingon Blanc

Enjoy as an aperitif or with delicately flavored foods like salads, oysters, scallops, and chicken.

The Sauvignon Blanc grapes are sourced from various clones, including 133 ER, SV 316D, 159C, 11R, and 7A. The 2024 vintage experienced a relatively cool season, apart from some warmer days during December and January, which was ideal for achieving optimal berry and seed ripeness.

This wine was aged on its gross lees for six months, enhancing its complexity and mouthfeel.

The grapes were gently de-stemmed and pumped through a mash cooler set at 5°C to cool the fruit. A dose of pectolytic enzymes and a small amount of SO₂ were added to aid in juice clarification, prevent oxidation, and inhibit spontaneous fermentations. After pressing, the juice underwent clarification via flotation and was moved to fermentation tanks. Inoculation with a commercial yeast strain followed, with fermentation maintained at 14°C to ensure a progressive yet stable process. The wine was left on its gross lees for six months before racking and a light fining prior to bottling.

In 1983 Gyles Webb and his wife's family purchased a run-down fruit farm at the top of the Helshoogte Pass in Stellenbosch where they established Thelema Mountain Vineyards. At a time when the South African wine scene was focused on quantity rather than quality Webb was a trailblazing pioneer on a mission to craft world-class wines. Construction began on the winery in 1987 and Thelema produced its first vintage in 1988. Situated on the slopes of the Simonsberg Thelema occupies mainly south-facing aspects that afford spectacular views of the Simonsberg Drankenstein and Jonkershoek mountains. Elevations ranging from 370 to 640 meters above sea-level make the 157-hectare estate one of the coolest and highest wine farms in Stellenbosch.
