Very fresh with ripe figs with gooseberry and grassy notes. Mineral core to the wine which are coated with texture which creates a wonderful mouthfeel. Figs, gooseberry and some asparagus ending with a dry clean finish.

It's all about creating texture. Both vineyards are picked and vinified separately. 95% of the grapes receives 4 hours skin contact before pressing. 5% are fermented 50% of the fermentation on the skins and then pressed out. Spontaneous fermentation are allowed to start and finish the fermentation to preserve the beautiful profile from the Elgin Valley. 4 Months aging on the lees after fermentation where after blending of the two vineyards are done and bottling followed straight after.
