Spier MCC Brut

Spier MCC Brut pairs wonderfully with seafood, especially oysters. It also works well with summer salads or can be enjoyed on its own as a celebratory toast. It’s a versatile sparkling wine that can complement both light and rich dishes.

The grapes are grown in Stellenbosch, primarily from 19-year-old vines planted on the mountainous slopes. The soils are a combination of Escourt and Glen Rosa types, benefiting from the cool breezes of the nearby Atlantic Ocean, which encourages slow, even ripening. Supplementary irrigation is used, and the region receives 400-650 mm of annual rainfall. The yield is about 8 tons per hectare.

The wine spent 23 months aging on the lees in the bottle following the traditional Méthode Cap Classique process. This lees aging contributes to the wine's depth and creaminess.

The grapes were hand-harvested and gently whole-bunch pressed. 90% of the juice was fermented in stainless steel tanks, while 10% underwent fermentation in old 400L French oak barrels. After the secondary fermentation in the bottle, the wine was aged on the lees for 23 months to enhance its complexity and texture.
