It also complements spicy dishes, such as Moroccan lamb tagine, as well as smoky barbecue fare. Hard cheeses, such as aged cheddar or gouda, also make a great match, highlighting the wine's spice and fruit characteristics.

The grapes for the Spier Seaward Shiraz 2021 are sourced from selected coastal vineyards in the Western Cape, where the proximity to the ocean provides cool breezes that moderate temperatures and extend the ripening period. This results in grapes with intense flavor and balanced acidity. The vineyards are planted on soils rich in decomposed granite, contributing to the wine’s mineral character. Sustainable farming practices are employed to ensure the health of the vineyards and the quality of the fruit.

The Spier Seaward Shiraz 2021 is aged for about 14 months in a combination of French and American oak barrels, with a portion of new oak used to impart subtle vanilla and spice notes. This aging process helps to integrate the flavors, adds complexity, and gives the wine its characteristic smoothness and richness.

After hand-harvesting, the grapes are sorted and destemmed. Fermentation takes place in stainless steel tanks to maintain freshness and fruit purity. During fermentation, gentle extraction techniques are used to achieve a balanced tannin structure and enhance flavor complexity. The wine undergoes malolactic fermentation to soften the acidity and improve mouthfeel, resulting in a smoother texture.
