Kaapse Vonkel Brut Rose

The grapes were handpicked and gently pressed to collect the purest juice, which was fermented in stainless steel tanks at 14-16°C with selected yeast strains for optimal fruit and freshness. After expert blending, the wine underwent bottle fermentation, creating fine bubbles. It was then aged for at least 16 months in cool, dark cellars, adding complexity to the red berry flavours. Once harmony was achieved, the yeast was removed through disgorgement, and a small dosage was added to create a perfectly balanced brut rosé.

The 2022/2023 season in Stellenbosch started with mild, dry conditions. While the dry weather led to smaller berry sizes and lower yields, it also contributed to exceptional quality. The cool ripening period was particularly beneficial for early cultivars, leading to the production of high-quality wines.
