Elgin Chardonnay Clonal Selection

This wine pairs well with a variety of dishes, including roasted chicken, seafood like lobster or scallops, and creamy pasta dishes. Its bright acidity and mineral notes complement the richness of these foods, making it a versatile choice for pairing​.

The grapes are sourced from the Elgin region, known for its cool climate and high-quality Chardonnay. The vineyards benefit from the region's elevation, proximity to the Atlantic Ocean, and a variety of soil types including clay and sandstone, providing the ideal conditions for Chardonnay to thrive​.

Aged for eleven months, this wine utilizes a selection of French oak barrels from Burgundy to achieve a balance of oak influence and varietal purity. The extended lees contact contributes to the creamy texture and complexity​.

The wine is produced from a selection of eight small parcels of Chardonnay, utilizing Dijon clones CY96, CY95, CY76, and the Entav clone CY548. Each clone and soil type is vinified separately to enhance complexity. The wine undergoes aging on the lees to develop its texture and depth​.
