Biodynamic Sauvignon Blanc

This Sauvignon Blanc pairs well with a variety of foods, including seafood dishes, fresh salads, and light poultry. Its vibrant acidity and aromatic profile also make it an excellent companion for dishes that include herbs or citrus​.

This wine is crafted from vineyards in Stellenbosch, South Africa, following biodynamic farming principles. The grapes are hand-harvested to ensure optimal ripeness and quality. The estate's biodynamic practices emphasize sustainability and ecological harmony, aiming to enhance the vineyard's natural health and resilience​.

After hand harvesting, the grapes are cooled overnight and undergo whole bunch pressing. Fermentation occurs spontaneously in 300-liter oak barrels, using only natural yeasts. The wine is then aged on the lees in a combination of first, second, and third-fill oak barrels for nine months. This method contributes to the wine’s complexity, mouthfeel, and subtle oak influence. The best barrels and batches are selected for this specific bottling​.

Biodynamic Winemaking. The future lies right at the beginning. There's a lot to be said for the way wine used to be made. Back when the Reyneke farm first began as ‘Uitzicht’ in1863 there were no chemicals or technological advancements. Just the land and nature. Uitzicht (which is the Dutch for ‘View’) is perched overlooking Stellenbosch and False Bay. It has north east and south facing slopes. The best land is planted with vines and the remainder complements the vineyards with pasture compost-making and pockets of wilderness. It’s the kind of balance that’s far more important than ensuring the spreadsheets all balance out. And it’s the true time-honoured tradition of winemaking.
