Saint Romain

Grilled chicken; soft-rind French cheeses; sushi.

Selected (purchased) fruit from villages-level parcels in the village of Saint-Romain, due west from Meursault. Soils are very stony and dry; sub-soils mostly clay. Vineyards range from 900 to 1,200 feet in altitude, and face east/southeast.

Aged in same barrels.

Hand-harvested. Pressed full cluster; fermented on indigenous yeasts in 342L French oak barrels (30-35% new)

Remoissenet Père et Fils was founded in Burgundy in 1877 and was established in a 14thcentury building in Beaune. In recent years, the company was run by larger-than-life Roland Remoissenet for around 30 years, before it was sold and taken over by a consortium including the Milstein brothers from the USA, Halpern Enterprises of Toronto and Louis Jadot, with Bernard Répolt, a veteran of managing several other Beaune houses, in charge. The business is on the lookout for vineyards to acquire.
