Pinot Grigio can be classified as one of three main types. Those which are dry and mineral; made from those grapes which are high in acidity, lack of fruit and increased levels of salinity. Those which are fruity and dry, with flavours of lemon; white peach and yellow apple, less intense acidity and a more oily textured mouthfeel having undergone malolactic fermentation on the whole. And those which are fruity and sweet with flavours of sweet lemon candy; honeycomb and honey crisp apples. Pinot Gris, although essentially a synonym for Pinot Grigio implies a fruity, French style wine where the aforementioned denotes a drier, Italian style wine.
