The Paul Cluver Estate Chardonnay 2020 displays a bright, pale straw color. On the nose, it offers an aromatic bouquet of citrus fruits such as lemon zest and lime, along with notes of green apple, white peach, and a hint of pineapple. These fruit aromas are layered with subtle nuances of vanilla, toasted almonds, and butterscotch, reflecting the influence of oak aging. On the palate, the wine is medium-bodied with a creamy texture, showcasing flavors of ripe apple, pear, and citrus, balanced by a refreshing acidity. The finish is long and elegant, with a lingering minerality and a touch of spice.

After hand-harvesting, the Chardonnay grapes are whole-bunch pressed to extract the juice gently. The juice is then fermented in French oak barrels, with a portion of the barrels being new oak. Fermentation is carried out using natural and selected yeasts to enhance complexity. Partial malolactic fermentation occurs, which adds a creamy texture and softens the acidity. The wine is aged on its lees for several months, with regular stirring (batonnage) to enhance mouthfeel and integrate flavors, providing richness and depth.

The Chardonnay grapes used for this wine are sourced from estate vineyards planted on slopes with shale and sandstone soils. These soils provide excellent drainage and contribute to the wine’s mineral character. The cool climate of the Elgin Valley allows the grapes to ripen slowly, preserving their natural acidity and developing complex flavors. The vineyards are managed using sustainable and environmentally friendly farming practices, with a focus on maintaining the health of the vines and the surrounding ecosystem.
