Paserene
Paserene is a small family operated winery owned by Martin Smith and Ndabe Mareda the sole purpose of which is to produce high-end luxury wines. Great care was given to ensure that the wines produced and artwork on the labels are truly authentic to its “sense of place and people” and will guarantee a lasting legacy. The name Paserene comes from the Latin word Passeriformes the order of traveling and free birds containing swifts and swallows. Paserene is situated in the quaint town of Franschhoek and is home to their award-winning wine range. A professional and contemporary tasting lounge is situated on the property.
Description
The wine shows a dark red to black core with a youthful violet rim. On the nose there is an over-delivery of black currants, black cherry preserve and creme de cassis. Secondary to that, the wine exhibits a beautiful mineral component with crushed rocks, pencil shavings and a majestic liquorice flavour. Beautiful well integrated oak brings a lifted mid palate with a silky texture. The tannins on the wine are soft and supple with a gentle acidity that gives the wine great length and a luxurious mouth feel.
Food Pairing
A perfect match would be lamb with lots of rosemary and garlic, or thyme roasted chicken.
