"100% Grenache grown on sandstone, one-third whole-bunch fermented, one-third whole berry, one-third crushed and destemmed. In used 300-litre French oak barrels for 10 months. Pale, transparent red. Wow, this is spine-tinglingly pure! It tastes like rose petals and wild raspberries turned into silk and wrapped around tiny, mountain-stream-smooth pebbles. Pixels and petrichor. Playful at first, then very serious. The tannins are like the bark of the paper tree, smooth and pocked and rustling and super-fine and you want to rub your cheek against them. I LOVE THIS! We harvest in the cool, early hours of the morning, into 14kg Lug boxes and transport grapes back to the cellar in refrigerated trucks where they are allowed to cool overnight. After gentle foot-stomping and crushing with one third whole-bunch, one third wholeberry and one third destemmed this vintage, natural fermentation gets underway, at its own pace, in a combination of open and closed fermenters. Once complete, we macerate gently with a single, daily pumpover/punchdown.
