In the cellar, the juice of all three of our varietals was fermented on the skins for four to six days in open cement tanks. The yeast type used for inoculation was NT50. The wines also underwent secondary malolactic fermentation. Before wood maturation the wine was blended in a ratio 59% Cabernet Sauvignon, 29% Shiraz and 12% Pinotage.

Our wine maker’s signature premium blend, crafted to give extra dimension to the quality range of Middelvlei Wines. Bearing the family name, this wine reflects the optimum of quality and excellence this well-known Stellenbosch Estate has to offer. The grapes were selected from vineyards that were carefully tended to, to ensure a low yield and concentrated fruit. The grapes were harvested during February and March 2019 at 25° – 26° Balling and were placed in small baskets to prevent bruising. The average rainfall is 700ml per annum. During the year the rainfall were on the average at 698 mm for the 2018/2019 season. Although the vineyards benefit greatly from the water retentive clay soil, the vines are irrigated.

The wine was matured in 50% new oak barrels and 50% second fill oak barrels for 13 months– 30% French Never and 70% American Oak.
