These three batches were whole bunch pressed to tank and settled out gently overnight. From here the juice was racked to big old French oak barrel where it was allowed to ferment naturally. A portion of the Franschhoek Semilllon was skin fermented and spent 14 days on skins with gentle daily punch downs. Once the wine was dry it was stirred on the gross lees for 5 months without sulphur. Just before bottling it was racked, sulphured up and protein stabilised. The wine was gently filtered before bottling. The components went through full malolactic fermentation in barrel.

The Semillon grapes come from Bot River as well as Franschhoek. The Chenin blanc for this wine came from Durbanville from an organically grown vinyeard that has a view of Table Mountain. These batches were hand picked, chilled over night and pressed the following day.

Once the wine was dry it was stirred on the gross lees for 9 months without sulphur. Just before bottling it was racked, blended with the Semillon, sulphured up and protein stabilised. The wine was gently filtered before bottling.
