Rioja Reserva

This wine pairs beautifully with a variety of dishes. Recommended pairings include lightly smoked hake kokotxa with Pil Pil sauce, Galician green chickpeas with organic egg yolk and white truffle, and line-caught baby squid with roasted squid jus and "redondilla" olive oil.

The grapes for this wine are sourced from the Ygay Estate, located in the Rioja Alta region. The estate spans 300 hectares, with vineyards situated at altitudes between 320 and 485 meters. The soil composition includes limestone and clay with alluvial influence, providing optimal conditions for vine growth.

The wine is aged for 21 months in 225-liter American oak barrels, followed by additional aging in the bottle before release.

Each grape variety is fermented separately in stainless steel tanks to maintain their individual characteristics. The fermentation process includes periodic pump-overs and punch-downs to ensure optimal extraction of color, flavor, and tannins.
