Brut Sparkling Wine

These perfectly ripe grapes ripen early in the season to ensure the right style. Once in the cellar grapes get gently pressed to avoid any harsh phenols in the juice and cold fermented thereafter.

Selected vines from the greater Western Cape area. Grown mostly on rich alluvial soil types to express prominent fruit. The weather conditions is somewhat Mediterranean like with cool evenings and hot days in between. Harvest typically happens in the cool of mornings to preserve the fruit and limit oxidation of flavours.
