"A very different style to the 1996, this has much more savory, autolytic influence. Fresh, chalky aromas with hazelnuts and grilled lemons, as well as a super fine, toasty thread. There’s roasted coffee, smoky grilled lemons and a big mouthful of fresh white peaches and truffles. Gently nutty. Pulls into chalk at the finish. Eight years sur latte and seven years sur pointe. Disgorged with 7g dosage of the same wine." JS

8 years of horizontal aging on lees, with a greater contact of the dead yeasts with the wine and a certain exchange of oxygen through the neck of the bottle. This was followed by 6 years of vertical aging on lees, with the dead yeasts concentrated in the neck of the bottle, limiting the contact with the wine and stopping the exchange of oxygen, generating a reductive environment that rejuvenates the wine. The wine then underwent 7 years of post-disgorgement aging sur bouchon.
