Isobel Mourvedre Rosé

Feta, spinach, mint and quinoa tartelettes.

The Lothian Mourvedre Rosé was handpicked on 6th April 2020. The block had been grown with a ballerina trellis, with its more open canopies which ripened the grapes.

The wine was kept on its gross lees for about 4 months with stirring when needed. The wine was racked, and bottled with the same dryness at which it finished the ferment.

Grapes were picked in the early morning and fed into the press for whole bunch pressing. The degree of ripeness and the gentleness of the whole-bunch pressing, allowed all the juice to be used without fear of excessive colour pick up.
