Unlike the the traditional, Champagne, or MCC methods where the wine is fermented dry, then bottled where sugar and yeast is added to create the secondary ferment – the beautiful sparkle in this wine is created by the natural sugars of the grape and the natural yeasts in the vineyard. While the primary fermentation is underway and the sugar level is slowly dropping, this wine is closely monitored. When the sugar drops to just the right point, the wine is bottled during that active ferment. It then finishes fermentation in bottle allowing for the perfect bubble to form.
