This vineyard was carefully chosen as it consistently delivers fruit of exceptional quality. Hand picked at 19 degrees balling into small lug boxes and cooled overnight in reefers.

This MCC is aged sur lees for a minimum of 24 months before being riddled and degorged .

Whole berry pressed to ensures fractional recovery. Only the free run juice from the hand-picked and hand-sorted grapes was racked off and fermented dry. Using the traditional méthode champenoise, the wine then undergoes a secondary fermentation in bottle.
